Paleo Pork Tenderloin wrapped in glorious bacon!

10917338_796515757094777_2784533776630132732_nA new family favourite from 21 Day Sugar Detox cookbook is when ANYTHING wrapped in bacon so this Paleo Pork Tenderloin is a go to recipe for a fast and easy meal.

Take two pork tenderloins and cut in half. Rub Italian seasoning all over pork. Then wrap the pork in bacon!

 

I cut the tenderloin as it was easier to cook this way…once wrapped in bacon….

Satay in pan on medium for about 6 mins. on each side. Then place tenderloin in a baking pan in the oven for 25 mins. at 350 degrees…

Keep an eye on it as the original recipe said it only needed 15 mins. to cook…that was way too rare for me. Once out of the oven, let sit for 4 mins.


Lemon garlic zucchini noodles…minus the garlic, I CAN’T STOMACH IT!

Satay with a tsp of coconut oil, 1 tbsp water and a dash of salt and pepper for about 4 mins….

For the dressing I used 1 tsp of olive oil, a little bit of lemon zest, 1 tbsp fresh lemon juice and 1 tsp of minced garlic if you like….whisk together…then add a couple of diced black and green olives…pour dressing over noodles and let sit. This can be served warm or cold.
