Power Oatmeal Pancakes!

Who doesn’t love pancakes!

I used to love going to IHOP just so I could pour every flavour of syrup on my pancakes!  After I inhaled this mountain of wheat and sugar, I felt like a brick of dough had landed in my stomach.  When I got up to leave, I looked like I was pregnant because I was so bloated. Once I got home, I would totally crash and have to have a nap!  This had to stop.  I started to research healthier recipes and their ingredients.  Finally after may hit and misses, I got it right!  These power oatmeal pancakes will fill your tummy, fuel you for the morning and keep you belly feeling good!

Here is list of your ingredients: 9 egg whites, beaten until fluffy, 1 cup low-fat cottage cheese OR 3/4 cup UNSWEETENED apple sauce, 2 scoops protein powder, 1 cup large flaked oatmeal raw, 1/2 cup flax seeds, 2 tsp baking powder, 1 Tbsp melted coconut oil, 2 tsp cinnamon.  Place all ingredients in food processor EXCEPT egg whites, pulse til mixture is complete.  In a large bowl whisk egg whites gently, add solid ingredients and mix together with spoon…but I like to use my potato masher cause I’m so hardcore!  IF THE MIXTURE IS TOO RUNNY, ADD 1/4 CUP OATS TO THICKEN…

Use a non-stick frying pan on medium, and scoop out 1/3 cup portions.  These pancakes will expand once they start cooking so leave enough room in the frying pan otherwise they’ll end up looking like mine!  Once they start to bubble flip over gently.  I ended up with 14 power pancakes in the end.  This is a “base” recipe, you could add 1/2 cup shredded apple or 1/3 cup finely chopped nuts.  I like to top mine with 1/2 cup fresh fruit instead of syrup or before a workout, I spread lightly almond butter for an extra punch of protein.  Just be mindful of adding extras, as the calories can add up quickly.  WHY do I love these pancakes so much, because they are perfect for grab and go!  Make a batch, throw them in the freezer and when you want one, pop it in the toaster, slap some almond butter on it and run out the door!  Portion size is 2 pancakes.
